Asian Tomato Mushroom Rice Noodle Soup

Ingredients

  • 1 bundle of rice noodles
  • 2 whole tomatoes
  • 6 shiitake mushrooms
  • 1 whole ear of corn
  • 2 heads of bok choy
  • 1 pack of popping tofu
  • 1 small knob of ginger
  • olive oil
  • soy sauce
  • sesame oil
  • salt
  • water

Instructions:

  1. Cook the rice noodles in boiling water for 10 minutes. Drain and rinse them under cold water.
  2. Dice the tomatoes, slice the mushrooms, strip the corn kernels from the cob, and slice the ginger.
  3. Heat olive oil in a pot and sauté the ginger and mushrooms until fragrant.
  4. Add the tomatoes and corn kernels to the pot, pour in water, and bring the mixture to a boil.
  5. Drop in the popping tofu and season the soup base with soy sauce.
  6. Add the cooked rice noodles and bok choy to the pot. Simmer until the vegetables are tender.
  7. Drizzle with sesame oil, season with salt to taste, and serve hot in a bowl.
