Asian Stir-Fried Brown Rice

Whip up a healthy, fiber-rich dinner with this quick Asian brown rice stir-fry. Packed with fresh carrots, sweet corn, mushrooms, and vibrant choy sum, it’s tossed in a savory soy-sesame sauce for an easy, flavorful weeknight meal.

Ingredients:
- 5 whole shiitake mushrooms
- 1 thumb-sized piece of ginger
- 1 small bunch of choy sum
- 1 carrot
- 1 whole ear of corn
- 3 stalks of green onions
- avocado oil
- salt
- soy sauce
- sesame oil
- black pepper
Instructions:
- Chop the carrot, mushrooms, choy sum, corn and green onions into bite-sized pieces
- Heat avocado oil in a pan and sauté the white parts of the green onions and ginger until fragrant
- Add the mushrooms and salt then stir-fry until softened
- Toss in the carrots and corn and stir-fry until tender
- Add the choy sum and cook until wilted
- Stir in the soy sauce and black pepper to coat the vegetables
- Add the cooked brown rice and stir-fry until heated through
- Turn off the heat and mix in the green onions and sesame oil
